Flourish: Andi’s Caprese Pasta Salad

Recipe

Over the past year, our resident PA-C and Director or Telehealth, Andi was looking for creative and new recipes to try with her family after repeated nights of the same rotation over quarantine and discovered a fan favorite for both the kids and adults alike—caprese pasta salad. With simple fresh flavors, this recipe makes for the perfect summer dish that will help ease your kids into a new flavor palate without being too overwhelming. Pour a glass of Italian red (dare we say chilled for summer?) and you have a perfect adult treat as well. 😉

Andi’s Caprese Pasta Salad

Ingredients:

16 oz pasta (I like rotini or fusilli)
1 pint cherry tomatoes (cut into quarters)
1 container mozzarella pearls
1/4 cup store bought pesto (or be fancy and make your own in your food processor or magic bullet, all you need is a cup of basil, 1 or 2 gloves of garlic, a tablespoon of pine nuts, a chunk of fresh parmesan, olive oil and a touch of water)
1/4 cup EVOO
2 tbsp balsamic vinegar
1 tsp garlic powder
1 tsp salt
1 tsp black pepper
1 tbsp fresh chopped basil for garnish

Directions:

1) cook pasta
2) while cooking prep sauce and tomatoes
3) when pasta is done drain and rinse in cold water (otherwise it melts the mozzarella)
4) toss all together and tweak as desired!
